To Floppy or Not
Gracie is 3 years old. If I shave her ears they stand (texbook, picture) perfect. If her ear hair gets longs they start to flop. If this is the reason your dogs ears flop, fine shave them. But, if they just are too thick and flop naturaly, I would leave them alone.
I think floppy ears are fine just like full hairy tails are fine too.
