We train with hand signals too, and for speak its the index finger pointed to the sky.
With our little Sheltie (who looks like a mini Lassie) we prentend to have conversations with him like on the Timmy and Lassie show.
"Where's Timmy?" - point finger - bark bark
"He fell in the well?" - point finger - bark bark
"Did somebody push him?" - point finger - bark bark
You get the idea!!

People who don't know dogs and don't understand hand signals, don't know what to think!!
Oh yeah, The Yorkies are up on the basics:
sit
chill (down)
hang (stay)
go to your room (sit in cage and wait for treat)
show me your belly (roll over)
cummear (come here)
lemme getcha (turn butt towards me so I can pick up)
no barking
shame on you (no begging)
