Morning all!

There was a breakfast recipe in yesterdays's newspaper...I've just made it for brunch and it was very delicious, so thought I'd share!

Scottish leek, potato + bacon stovies with fried eggs.

Serves 2

1 leek, washed and roughly chopped
1 large potato - baked
1 teaspoon creamed horseradish
4 slices 'streaky' bacon
2 eggs

1. Chop the bacon into pieces. Fry and set aside. Boil the leek in salted water until softened, then drain and chop.

2. Put the leek into a bowl. Chop up the potato and add that to the bowl too. Stir in the horseradish with a little butter. Season with salt and black pepper.

3. Now it's time to add the bacon, mix it all together and then pat into 2 thick pancake shapes.

4. Heat a little oil in a non-stick pan and fry the Stovies for 3-5 minutes on each side until golden brown. Serve with a fried egg on top of each one.
