It is important that she eats - maybe even if it isn't the renal food, but there are still things that need to be avoided. Bacon is an absolute nono for dogs. Mayo is a concern, etc. Feeding the wrong thing could cause some very serious issues (aside from harming the kidneys more).

If she is really preferring human food and will eat it, then I'd go ahead and talk to a board certified veterinary nutritionist. I know Dr. Rebecca Remillard has a special interest in kidneys. She would be an extremely good choice.

I think if her numbers are "very high" and she had the kidney disease breath, your thinking about fluids is probably right. You can always go for a second opinion if you think your vet isn't doing things correctly (I think that would be a much better idea than insisting on something). A veterinary school or at least an internal medicine specialist is a really solid direction along wtih a nutritionist. NF is great..if she will eat it. Also though, she may not be thirsty with the current diet. When my girl eats wet food, she rarely drinks.
