You know.. Being a southern and being a cook (well I do teach home economics- food productions) you would think I could fry chicken.
But my dh does not like fried chicken thus I really have lost the art!
Yum.. Southern fried chicke is the best... I think the secret (besides the spices) is the oil. You have to haven enough oil and it has to be the right tempature to seal the breading and keep the chicken crispy and insides moist.
