4 bananas, mashed
1 cup sugar (I use lite brown)
1 egg
1 1/2 cups flour
1/4 cup melted butter or margerine
1 teaspoon baking soda
Raisins and/or nuts optional
1 teaspoon cinnamon optional
Bake in a greased loaf pan, 325 degree oven for 45 minutes.
Test for doneness and bake 10-15 minutes more if necessary.
Remove from pan asap and cool on a rack.
I also save leftovers such as beef stew, chili, etc. for soup bases. Food is EXPENSIVE.. a real shame to throw stuff out that can be recycled into something delicious. |
I do that with bananas too ~ it also works with AVOCADOS
