It really is not unusual for a rehome/rescue to behave this way. Truthfully, her personality will beginto grow over the next several weeks.
It does not sound like she was treated very well in her previous home and yours sounds to be full of love. Make sure you give her a place to call all her own. I know it sounds horrible that she lived in a closet but truth be told that is what she is use to and knows nothing else. Do you have a cave bed or doggy tent that you might be able to offer her? Maybe she was not fed around other dogs and is afraid to eat while they are in the room. There could be so many reasons for her behavior. There is a great sticky that you might want to check out.
