I guess the rule of thumb is you should have one box per cat, plus one. So for one cat, you're supposed to have two boxes. In my experience, Arm & Hammer probably works the best out of the litters you can buy at the supermarket. I also use covered cat boxes with doors and this helps immensely. If your kitty has super stinky poop, you might try gradually changing the food. I have one cat that has horrible smelling poop if he eats anything but Life's Abundance. We've tried numerous high quality foods, but it's the only one that doesn't make his poop nasty stinky.
