Pumpkin Bars PUMPKIN BARS (24 servings, 1 pt each)
4 large eggs
1 cup unsweetened applesauce
1 cup Splenda
2 cup canned pumpkin
2 cup all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/2 tsp ground cinnamon
1 tsp cloves
1 tsp ground nutmeg
Mix eggs, Splenda and applesauce, blend well. Add pumpkin, add dry
ingredients, mix well. Bake 375 for 20 minutes in a jelly roll pan.
CREAM CHEESE FROSTING (24 servings, 1 point each)
3 Tbsp light cream cheese
1 1/2 cup powdered sugar
1 Tbsp fat-free skim milk
1 tsp vanilla extract
3 Tbsp light butter
Beat together and spread on cake. |
