Here is another Not to sure about this one but she said it is good....
CHOCOLATE PEANUT BUTTER FUDGE
· 15 ½ oz. can butter beans, drained and rinsed
· 1 cup unsweetened cocoa
· ¾ cup reduced fat peanut butter
· 1 Tbsp. Vanilla
· 5 cups confectioners sugar
~Heat beans in microwave 1-2 minutes until hot; process in food
processor until smooth. Add cocoa, peanut butter, and vanilla-blend to
combine. Place in large bowl-add sugar 1 cup at a time, kneading by
hand--dough will be stiff. If crumbly, add ½ tsp. of water at a time until
dough is smooth. Spray an 8 x 8 pan w/cooking spray. Press fudge mixture
into pan using waxed paper (which has been sprayed w/cooking spray) and a
spatula. Leave wax paper on to stop drying out. Refrigerate until firm (at
least 1 hour). Cut into 64 squares- 8 down, 8 across. Keep wrapped &
refrigerated. Makes 64 squares of fudge at 1 point each. Enjoy! |
