Just got some more input from a friend that works with rescue and does fostering:

Also, pack several packages of wet wipes for cleaning accidents in the crates and in your car, along with plastic bags to package things like used wet wipes and potty pads. Plastic grocery bags work really well for this. Animals get scared during storms, and scared animals will poop and pee wherever they happen to get scared.

Living first in Southern California (wildfires) and now Oklahoma (tornadoes) we are well versed in the art of getting ready to get the hell out, while accompanied by large numbers of panting, panicking, peeing canines. It's never pretty but it doesn't have to be tragic.
