It's like a starch. But it's smooth and really good with milk and sugar. Kind of an aquired taste but if you like smooth and creamy you would like this.

From the few times i've tasted collard greens I loved it! I like the fact that it had ham in it.
Then again i'm a huge veggie fan, would go vegetarian if my family wasn't such carnivores.lol
