She just needs to 're-set' her habits from what they were at her previous home. You should also change her food gradually,not all of a sudden when she is out of the stuff her previous owners fed her. Go ahead and buy new, and change out 1/8th to 1/4th of the brand you usually feed her and replace it with the new for a week. Do that for each week and gradually increase the new until the old is out and the new is all that is left to eat. That should be less tummy upset for her.
Keep doing the crate training and when she is lose in the house put on her leash and attach it to yourself so that you know what she is up to at all times. You should be paying attention to what she is doing as you are doing other things, cleaning,watching tv, cooking. Then when you notice she is looking for a place to use the bathroom, you should take her out immediately. If you cannot keep an eye on her, then crate her until you are finished, then bring her out and take her outside and give her your potty and/or pee command.
