A high quality food should help improve his coat over the course of a couple of months. Also, the better the quality of the food, the less they have to eat in order to meet their nutritional requirements. In addition to the hand feeding, you might want to leave food down all day; as he gets more comfortable with you and his new home situation he ma start to eat on his own.
I'm glad to hear the little guy seems to be adjusting well with you. Did you get him from a rescue or an individual? What was he eating with them? Some Yorkies are extremely picky eaters and turn up their noses if their diet is changed abruptly.
Until you get him checked out, I would avoid giving him snacks to boost his weight since many of the typical dog treats/snacks are high in fat (and can trigger digestive upsets and pancreatitis) as well as being low in nutritional value. That being said, many yorkies like boiled, skinless chicken as a treat. Mine also love low fat cottage cheese, scrambled eggs, plain (unflavored) yogurt and blueberries.
