I have gone to a vet who combines Eastern and Western medicine for fifteen years, and I'm not opposed to holistic treatments. Polo's symptoms are acute, and none of these symptoms can be caused by food allergies. A food elimination diet is the only way to tell about food allergies since bloodwork is not reliable to determine them. One of our little ones had severe allergies, and I have a lot of experience with them. Polo needs to be treated by someone who specializes in neurological issues, and he needs a proper diagnosis before you can determine a treatment plan. It just doesn't seem like the holistic vet you are seeing is going to help Polo at all, and he needs treatment now.
