What drugs/supplements/herbs is he on? The improvement could be explained if the regular vet or neuro gave certain drugs.
Food allergies don't cause neurological conditions. It is also impossible to accurate diagnose them without an elimination diet that takes many weeks. It sounds as though this holistic vet is going against the peer reviewed and accepted veterinary literature and has instead decided to do their own thing. Your pup needs to be under the care of a neurologist, not somebody who wants to guess at what is wrong and try questionable treatments that don't have any solid backing.
Please don't let him jump up or down. He should be crated if you can't be with him. It's just too dangerous.
