I had an older Yorkie rescue who had about 4 teeth total, and only one incisor, and he had no problem eating. I think for the most part he just swallowed his kibble. The vet said that's usually the case, and he hadn't seen a dog who had problems swallowing it. I was initially concerned because I was feeding Canidae back then, and the kibble wasn't tiny. But he always ate when I mixed it with a little canned or home-cooked.
If it were to become a problem, you could always go to a high-quality canned food, but I wouldn't fret over it.
As for why she lost the tooth at such a young age, I agree, I'd want to see a vet and make sure there's no infection. If it's a dental hygiene issue, you might consider brushing. I've had great luck with a finger brush and some poultry-flavored doggie toothpaste.
