Please try to freeze some its so easy. Buy pie pumpkins at the store, i usually get 3 of them around 8" each, then i cut a few slits in the whole pumpkin, wash the skin well and bake in the oven 350 i believe it was 1 hour baking in the middle shelf for all three, cookie sheet under them for drippings. I got about 4 cups per pumpkin, pureed with a hand blender and froze it all in 1 hours worth of work, here is a link to the site. But it works wonderful no worries looking for in the stores later in the year.
