That's odd that the one breeder wants you to chose your puppy at only five weeks. Most reputable breeders don't even want people visiting until the puppies are at least six weeks old for fear of parvo which can be carried in on shoes.
How long of a wait list does the other breeder have? It often takes a year to get a puppy from a reputable breeder.
Have you asked the breeders who may not have anything available to refer you to other breeders? The YTCA members probably know of other show breeders who may not be as well known who may have puppies.
Try to remember that hopefully you will have this dog for 15 years so taking the time to find a good breeder now is well worth it.
