Update:
She has used the bell twice more now, once to go poop and once to go pee.
BUT she has also been peeing more on the carpet for accidents before I catch her while before if she has any accidents it was on the tile flooring in the kitchen....grrrr.
I realized today, watching the process of her ringing the bell is that I think she can hold her poop longer so she has time to look at the door, think, and then ring the bell, where as with pee, when she has to go she has to go.
Overall, I am just excited that she kind of gets it
