you CAN definitely find demodex mites in a fecal. they will be dead, obviously, but they can be there.
whether you can make the determination that the dog has mange because its found in the stool is debatable.
Personally, i would want a skin scraping done on the spots with thinning hair or lesions if there are any.
Does Bentley have any such spots?
