Because experience has shown that they learn a tremendous amount from their mothers between 8 and 12 weeks. And it has been shown that they have a lot less issues with eating and biting and fear when they get older.

Just because one 12 week old puppy has not shown any issues from being rehomed at 8 weeks, does not mean that it is a good idea.
