I just throw a whole chicken in the crockpot with a little water and seasoning before i leave for work. When i get home pour off the juice to a pan on the stove and throw the dumplings in to cook for a few minutes and your meal is ready. you can just use can biscuit dough for dumplings.... Easy
I also sometimes stuff the chicken with stovetop dressing then throw in the crock.

Put a nice beef roast in with a little water then use the juice later that evening to make gravy, pour over mashed taters.
