Back when I had my Barry who had issues with luxating patellas, carrots were always the #1 treat recommended by my vet (that and green beans) as they're great for treats since they don't contain fat or preservatives and are something you can "more or less" feed all you want without them gaining weight. You're going to have to give more then a logical amount of carrots to a dog before it starts to gain weight for the sole reason you're giving carrots so I wouldn't worry about it. You may need to watch out for how their digestive system handles it though - some dogs get diarrhea with too much carrot, but you'd figure that one out right away.
