I think cooking it would be counterproductive to serving raw. I not only nuke for 10 seconds because my girls don't like it cold but because I mix it with a bit of kibble, and it mixes easier that way. I like mixing a little NV kibble mainly because I want them to have some hard food on their teeth. I don't believe a totally soft diet is good for dental health.
I dump the large bags into gallon freezer zip locs and throw them in the freezer. I just reach in and grab a couple medallions from each bag and throw those in my fridge container for daily use. I don't really worry about contaminants because I figure they're frozen rock solid, and are not going to be in the freezer long enough to be a concern in the long term. The ziplocs are easier to open and close than the original bags the product comes in. That way they get a variety every day.
Someone on another thread remarked that they lived near this company and it was a client of theirs in some capacity and they had actually visited the plant. They said it was remarkably clean and had no odor or something to that effect. If you search, you'll find it. At any rate, they were impressed.
Oh, and where I purchase my food, he said that for whatever reason, the freeze dried is good for short term, like a week or two, when you are in a situation such as traveling or vacation, when frozen is not feasible. It is not suitable for serving your pet long term, you may want to research further into why that is. I don't know if the quality is inferior or what.
