This may sound gross, but as far as the #2, I'd take some of his poop outside and put it close to where you want him to go. You might even take more than 1 of his droppings. Quite often, dogs stimulate themselves to "go" by smelling old poop.
As for his food, I'd just feed him where he wants it until you are more comfortable with his weight.
