Payment is due when the bitch is picked up. That is unless you're taking pick of the litter.

A return breeding should be in the contract if a live litter is not produced.

However, additional responsibilities are required of a stud owner: 1. Assistance in whelping should the owner of the bitch requires it. 2. If for some reason a puppy requires rehoming and the bitch's owner cannot take the pup back, it is the responsibility of the stud owner to step in.
