You would feed a dog 2-3% of their body weight for raw food. A puppy may eat more since they are more active. There really isn't a perfect science to it since all dogs and their metabolisms are different, but that's a starting block.
I would start with chicken as it's easy to digest, chew the bones, etc. Stay with that for some weeks and don't mix it up too fast too soon. Their systems need to get used to it, plus you can tell if your puppy is allergic to anything then. Chicken necks are mostly bones and you would want more meat. I would maybe start with a leg, or bone in breast first.
