Both of my yorkies get it mixed in with their canned food at doggie daycare. They also eat breakfast and dinner, and I didn't want to make them porkies by overfeeding them, so I figured some green beans mixed in at lunch would help them to feel full without all the calories. My bullmastiff was (obviously) a big boy and the vets recommend just what you were suggesting that you feed some green beans in place of kibble. It is important that the beans are unsalted. With him, we used the beans at meal time but also for when he was acting hungry so he could eat something low calorie to fill him up. I wish I could tell you to substitute x amount of kibble for green beans, but obviously his feeding schedule was much different than our yorkies. He actually only ate 2 cups of dry food per day, all 135 lbs of him. A cup in the morning, mixed with 1/4 can of wet and 1/4 can of green beans and the same thing for dinner.
You may want to ask your vet what he/she recommends.
