This aspect didn't even occur to me at first. My bed is also very tall (I'm 5'4" and have to kinda jump to get on it). When Silvia started sleeping with us again as a puppy, I made sure to put her in between DH and I, at the foot of the bed, and I tucked the sheets into the bottom of the mattress. I have woken up twice in her four and a half years to hear her whining because she was on the floor and wanted back in the bed. I don't know if she fell off or jumped off or what, but that's only happened those two times and she was OK, thank goodness! So, this might also be an issue when deciding if they will sleep with you. If you're worried about jumping off, maybe adding a ramp or some stairs, or pushing something up to the side of the bed might help.
