I work in the cheese shop in our local grogery store. Yes, I cut cheese for a living. I found through the years that there will be times when you can't get a certain cheese for months. Sometimes the imported cheese is held up in customs for a long time. A couple years ago the store sent all the cheese people to a cheese workshop. We spent the entire day learning about all the different cheeses, what makes them different tasting them. They kept telling us , Happy Cows make Happy Cheese. When we can't get a cetain cheese we joke around and say there must not be any Happy Cows there.
