Glad to hear it's going pretty well, that's always exciting!
The poo will be very small, hard, and non-smelly - that's normal; it may even have little white patches on it if it sits for awhile - that's just digested calcium. Firm is good, that's how they should be.
I dethaw a few day's worth at a time - I set it out on the counter and get it nice and dethawed, then I put the tupperware in fridge and feed from that for a few days. That way, I don't have to dethaw each day. You can definitely let it sit out for a good 1/2 hour before feeding, if you like - no harm there! Keep us posted as you go!
