The pooping on the carpet ... make sure you clean the carpet well with
enzymatic cleaner after each mistake
until you can trust her she shouldn't be allowed into carpeted areas
The biteing ...is NO! and she goes in her crate
DO NOT back down from a puppy like this
If she turns her head you hold her head with one hand and wipe her face or wash it or check her teeth with the other
allowing a dog to stop you from doing things like that means weakness to them and allows them to ascend the hierarchy scale

Don't run after her
She needs to come to you
Call her once ... use a treat or something she likes to entice her
