I don't know if this is the best way to go about it, but I have him do sit while I'm sitting down next to him, legs crossed. Then I don't give him the treat yet - I just keep calmly repeating sit several times while I calmly place the treat up on my knee. Then I put one finger up (like "just wait one minute"), and instead of the last "sit" I say "stay." Then a beat or so after that I excitedly say "OK! Good job!" and he runs over to me knee to grab the treat.
