I think the key to a good roast is the cooking method. Here's how I cook mine. I flour and brown both sides in a heavy oven safe pan with a lid. Then I add a little water to the bottom, cut up potatoes, carrots and onions and place them around the roast. Then I cook the roast (lid on pan) in the oven on 275 for about 3-4 hours. MMMMM.... it is really good, no matter the cut you use!!!
