Here's my favorite way to do them. Get boneless center cut chops, trim the fat off them and coat them in cracker crumbs (we use club crackers). Then we fry them in a skillet using olive oil. Just at the end of cooking, we add a slice of pepper jack cheese on top. Mmmmmmm....goood

  P.S. If you pat the meat dry before coating it, the coating sticks better.
