I have several other pictures like these where the colors change only from lighting and the angle of the camera or dog's head.

Now if the eye color flash is suppose to determine the texture of the coat then it shouldn't change from picture to picture.
Here's an interesting article on eye shine, I've read that the eye flash is more accurate with the old fashion cameras that actually use a flash, some of the variation is probably due to your camera. Eye Shine
