By the way, this salsa is AMAZING! I make it when I'm going over to someone's house and they dip chips it in (I use carrots instead) and EVERYONE loves it and always asks me for the recipe! Ground Walnut Meat
1 1/2 Cups Raw Walnuts, Ground in a Food Processor
1 1/2 TSP Ground Cumin
3/4 TSP Ground Coriander
2 TBSP Nama Shoyu (Raw, Organic Soy Sauce)
In a small mixing bowl, combine the walnuts, cumin, and coriander and mix well. Add the nama shoyu (soy sauce) and mix well. Spread approximately 1/3 cup of the walnut mixture along the center stem of each collard green leaf, then add a layer of shredded lettuce. Top with approximately 1/3 cup of the salsa just before serving. Fresh Tomato Salsa
2 Cups Tomatoes, Chopped
3/4 Cup Fresh Cilantro, Chopped
1/2 Cup Scallions, Chopped
2 TBSP Fresh Lemon Juice
1 TBSP Extra Virgin Olive Oil
2 Cloves Garlic, Minced
1/8 to 1/4 TSP Cayenne Pepper
3/4 TSP Sea Salt
1 1/2 TSP Ground Cumin
3/4 TSP Ground Coriander
Combine all of the ingredients in a medium mixing bowl, mix well, and serve.
I always make sure to use different tomatoes -- like cherry, grape, plum and beefsteak for a nice variety and it also looks so much prettier!
Then as your taco shell, you use COLLARD GREEN LEAVES w/ the stems cut off. I also shred about 1 cup of ROMAINE LETTUCE and put that in my taco. This is really a delicious meal and totally vegan!
Hubby isn't a vegan -- so he shreds some cheddar cheese and puts it on his tacos but I don't. If you want the "illusion" of cheese, you can finely shred some carrots ... but it's totally for show!

That sounds really good, and i just bought some walnuts too. The other day i bought a veggie burger at this diner and it was okay but it was pretty fattening, the bun was huge and then it came with all this sauce all over it, i was like well what's the point of that if its like 1000 cal.

I'd rather learn to make them myself and know what im eating.
btw why don't you eat much soy? The reason i ask is because i love soy milk, and soy yogurt, tofu but my bf told me he heard soy is not so good for women cause of something with cancer, do you know anything about that cause i don't want to risk anything lol but i love soy
