I use tofu a lot in eggs....I don't have to use too many eggs and it tastes great. ----Since tofu really does not have it's own taste...
I have also cut it into thinner chunks, rolled in crushed no salt wheat crackers (and pepper) and either bake or brown in EVOO. --good on salads.
