You have her on a wonderful food
! I'd be careful w/ organ meats, at first, as they can cause some diarrhea if given too many. Otherwise, "real" food is wonderful (I feed raw, actually).
As far as the itching, it's tough to say. You'd want to check all over for fleas or any skin issues. If it continues, I'd really get her in to the vet asap for a skin scraping - which is easy to do and pretty cheap.
Puppies do sleep a lot, so that sounds normal too. CONGRATS on your new baby, she sounds wonderful!
