Dogs do not play in this manner it sen to be rude and she in her brain is trying to stop what she sees as a start of what a fight in the making.
I stay calm and get her working on something other then split up like sits or down or stay or go settle.
With the bird I think she also reading things in prefect dog language and is not aware she reading things wrong to us. Put her to work.
