Plexiglass is a great idea the only problem is...I eventually get home and have to disassemble this whole catastrophe of gates... Any recommendations on how I should attach the plexiglass in a way that's removable?

Twist ties.. but make the tie on your side.. not his.. so he won't chew on the ends. Drill little holes in the plexiglass so you can stick them through.
