I can't imagine why the breeder didn't remove the dew claws. They can get tangled in clothes,etc. and actually be ripped off the poor puppy. They need to be removed in the first few (3-5) days after birth, otherwise it requires surgery to remove them.

The ears aren't necessarily up at that age. Have the tips been shaved to help them come up?

The weight is a difficult issue to predict. My smallest puppy now weighs the most. One of my bigger guys is now small compared to his brothers.
