well I called my boss and he suggested this :

Get some heavy duty foil, season brisket DO NOT cut off any fat off ... then cover it in onion medallions all over front and back...foil it very good in heavy duty foil then stick it in the roaster at 400 for about 2 .5 to 3 hrs turn over after this time and reduce heat to 350 for another 3 hrs... then take it out of the oven and open the foil and let it sit for about 1 hr.. then slice it with a electric slicer against the grain and then add your BBQ sauce and you can stick it back in the oven for a little longer? What do you guys think?

My mother in law does this overnight .... by the way its about 12.5 lbs of regular brisket I am making since the party is for 15 ppl and its supposed to be 2 ppl per 1 lb....jeez.. this is alot of work!!!
