Sorry, I'm not sure that I understand your question.
Buffalo is a meat and protein source just like beef and chicken while chicken belongs to the fowl family and buffalo/beef belongs to the large ungulates family.
I understand about feeling afraid of feeding raw at first; if you're interested then check out all of the postings, you will find that many topics and questions regarding RAW have been addressed here!
I, too was afraid at first! But frankly, now I'd be afraid to feed anything BUT raw!!!
I and other prey model feeders feed whatever kind of meat we can find but chicken seems to be in rotation the most. Venison, rabbit, ostrich are great exotic meats! But whatever you can find at your local butchers/supermarket will do just fine as well!
