If he gets loose stools that easily, it makes me think that maybe you just haven't found the right one for him yet. What are you feeding and have you checked out the ingredients? If there are too many ingredients, I have some other ideas for you for "top dressing".
As for switching, I'm a big fan of switching and variety - but you'll have to see what works for your baby. You could first find (1) right food, then try switching within the brand and so on.
About the freshness - does it come in the smaller cans? If not, I wonder if after you open the can - maybe put 1/2 can into the freezer in tupperware, then defrost later. That might be worth a try.
