I also rely a ton on Kashi GoLean (the regular/original kind) - a miracle food - chock full of protein AND fiber. I eat Fiber One also. I love sushi, lentils, chick peas, beans, veggie burrito bowls, fish tacos, seafood lasagna, crab, crab cakes, mussels.
It can be hard, I suppose, but I just don't miss meat one iota - nor do I mind if my hubby has it, I don't mind making it for him either.
I'd write more, but I have to go soon...but I'll be back later! |
That pretty much describes my diet. My daughter doesn't eat any seafood though and I have had no trouble ensuring she get's enough protein. She eats some dairy, beans, soy products but really protein is not as big an issue as most people think. Our diets are made up of so much more protein than ever before and way more than most other cultures. In my opinion it's really overstated in our country.
Just an example taken from a typical day in my daughter's life:
breakfast- cereal
lunch- peanut butter sandwich
snack- granola bar
Already, without even trying that is 27g of protein.
I try to cook balanced dinners including whole grains, veggies, legumes, beans and sometimes I cheat and use fake meat. It is really easy.
