The reason for the tilt is because both the ears are are at the same height on the head. Because ears are on different sides of the head, the brain is able to use these two sounds coming from two different horizontal positions (i.e. left and right) to get an idea of direction. But both of these sounds are coming from the some vertical position, which makes it harder to distinguish the height. The easy way to compensate for this is to tilt the head slightly.

The above explanation makes sense as I notice it often when he follows me into the bathroom and the sound of my voice must be different in the small room.
Explanation aside, it sure is fun to wonder what they might be thinking as they're listening to us!
