Cottage cheese doesn't have live cultures - but the yogurt will be good for that! You can def. feed the way you're planning, as long as they stay hydrated.
The "sticking to 1 food" thing is really dependent on the dog - some dogs have no reaction, some a bit, some have a bad reaction. I've always seen little to no reaction in my own dogs when changing diets. (same w/ the cats I've had)
