My grandmother use to make these....although, I haven't made them... Enchiladas #3
2 cans mild enchilada sauce
2 cans chili (no beans)
1 can cream of mushroom
2lb ground beef
1 onion, chopped
2 pkgs. taco seasoning
12 tortilla shells
1 lb cheddar cheese, grated
green onion - for topping
Mix sauce, chili and mushroom soup. Simmer .
Saute onion w/ ground beef. Drain.
Add taco seasoning w/ just a little water. Simmer.
Soften tortilla sheets in sauce one at a time, fill w/ meat mix and cheese.
Roll up and layer in casserole.
Spoon leftover meat mix into sauce and pour over enchilada's.
Add grated cheese and bake at 350 until bubbly.
Top w/ green onion (optional)
This freezes well too....just thaw and bake.
